Enne Badnekai

Enne Badanekai (also known as Ennegayi or Stuffed Brinjal in Kannada) is a flavorful and spicy dish from Karnataka, where small, tender eggplants (brinjal) are stuffed with a flavorful mixture of spices, ground peanuts, and sometimes coconut. These stuffed brinjals are then cooked in oil, which makes them soft and infused with the delicious stuffing. It is a popular side dish, often served with rice or roti, and pairs especially well with rice and sambar.

Ingredients for Enne Badanekai:

  • 8-10 small round or long eggplants (brinjal)
  • 2 tbsp oil (for frying and cooking)

For the stuffing:

  • 1/4 cup peanuts (roasted)
  • 1-2 tbsp sesame seeds (optional, for added flavor)
  • 1-2 tbsp grated fresh coconut (optional)
  • 2 tbsp tamarind pulp (or a small piece of tamarind)
  • 1 tsp jaggery (optional, to balance flavors)
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
